摘要: A method of forming a heat-treated liquid nutritional composition having a neutral pH and comprising a water-insoluble plant flavonoid comprises providing an aqueous liquid nutritional composition having a pH of from about 6 to about 7.5 and comprising protein, fat, carbohydrate, and water-insoluble plant flavonoid, homogenizing the liquid nutritional composition at a pressure of at least about 2000 psi, and heat treating the liquid nutritional composition. A heat-treated liquid nutritional composition having a pH of from about 6 to about 7.5 comprises a water-insoluble plant flavonoid, protein, fat and carbohydrate. At least about 75 wt % of the water-insoluble plant flavonoid remains suspended throughout the liquid nutritional composition after two months of storage at room temperature.

摘要: The present disclosure relates to a method of producing lactic acid bacteria dual-coated with protein and polysaccharide by using a protein hydrolysate, and lactic acid bacteria having a dual coating, produced by the method. The lactic acid bacteria having a dual coating of protein and polysaccharide, produced according to the present disclosure, have very excellent dry-freezing viability, acid resistance and bile resistance. Accordingly, the lactic acid bacteria having a dual coating of protein and polysaccharide according to the present disclosure will be very useful for the production of fermented milk, processed milk, fermented soy products, processed foods, functional beverages, functional foods, common foods, etc.

摘要: The disclosure describes methods for the purification of protein-enriched extracts to provide concentrates and isolates and methods for incorporation of such materials into products. The purification methods are adapted for removal of one or more of ash, metal salts, alkaloids, particulates, heavy metals, and other impurities and/or contaminants from extracts, as well as modifying the sensory characteristics (e.g., odor, color, and/or taste characteristics) of extracts. The methods generally include diafiltration, treatment with functionalized resins, and supercritical extraction. A protein composition in the form of a concentrate or isolate is provided, the protein composition including RuBisCO, F2 fraction proteins, or combination thereof extracted from a plant of the Nicotiana species, wherein the protein composition is characterized by one or more of: an ash content of less than about 15% by weight; a nicotine content of less than about 10 μg/g, and a heavy metal content of less than about 60 μg/g.

摘要: The present invention relates to a protein preparation produced from hemp seeds and to a cost-effective method for the preparation thereof. The protein preparation has a protein content or more than 65% by mass, a fat content of less than 6% by mass and a brightness L* of greater than 70. The protein preparation has a neutral taste, is bright and of superior quality so that it is suitable for foodstuff applications with high colour demands such as vegetable dairy alternatives (drinks, yoghurt, cheese) or bright vegetable alternatives to meat, poultry or fish.
