摘要: The invention relates to a dietary fiber preparation and to a method for producing same. The dietary fiber preparation is produced from the flesh of macauba fruit and has a dietary fiber content of more than 25% by mass, preferably more than 30% by mass, a fat content of less than 20% by mass, preferably less than 10% by mass, a water content of less than 20% by mass, preferably less than 15% by mass, and a bright colour having an L* value, measured by CIE-L*a*b* colourimetry, of more than 84, preferably more than 90. The preparation is characterized in that the alcohol-water-soluble substance content in the dietary fiber preparation is less than 40% relative to the mass of the preparation. The preparation has good technofunctional and sensory properties, is suitable for foodstuffs, cosmetics, pet food and technical applications and can be produced at low cost and without chemical modification.

摘要: Systems and methods describe improvements in the automated production of meat analogues. Ingredients are provided, including oil, water, binding agent(s), and one or more forms of protein to be separately and continuously conveyed through a facility. Concurrently to the ingredients being conveyed through the facility, a number of actions occur. The system emulsifies the oil, water, and binding agent(s) within an emulsifying machine to form a final emulsion. A hydration process is separately applied to at least one of the forms of protein. The system mixes and conveys the protein(s) with the final emulsion in a final mixer to form a final dough.

摘要: Embodiments herein relate to high protein, ready-to-eat breakfast flakes. In an embodiment, a method of making high protein flakes is included. The method can include forming an ingredient mixture comprising wheat gluten, wheat protein isolate, and pea protein concentrate, amongst other ingredients. The method can also include extruding the ingredient mixture to produce extruded pellets and flaking the extruded pellets to produce wet flakes. In an embodiment, a high protein flaked food product is included herein. The high protein flaked food product can include a plurality of high protein flakes. The high protein flakes can include wheat gluten, wheat protein isolate, and pea protein concentrate, amongst other ingredients. The high protein flakes have an average protein content of at least 50% by weight or higher. Other embodiments are also included herein.
