摘要: An apparatus for processing (for example, mixing or refining) a chocolate mass, having partially cylindrical walls which form a conching vessel. At least one coaxial part extends within the vessel. The walls and the coaxial part perform a relative rotational motion due to a drive that drives either one or both. In this way, the walls are swept by shearing tools. For an increased heat dissipation, and to enable a higher input of energy, at least two tempering arrangements can be provided. Furthermore, a channel exposed to air can communicate with the vessel, and comprises a cleaning tool. Mixing tools and shearing tools can be located in close vicinity so that chocolate mass is fed from one tool to the other.

摘要: A process for the preparation of chocolate paste is disclosed wherein various ingredients such as cocoa and powdered sugar are subjected to grinding and powdered sugar are subject to operations grinding to a predetermined degree of particle size, fluidification by dispersion of the particles of sugar and cocoa into a continuous fatty phase and of degassing for the removal of water and undesirable volatile compounds. At least one portion of the treatment is carried out in a conveyor with several screws provided with means for regulating the temperature of the entrained material. According to the invention, after a preliminary grinding of the ingredients to obtain a refined paste having the desired degree of particle size in the screw conveyor a dry-conching treatment of the refined paste is carried out and then the liquefaction of the paste is obtained by the incorporation of adjuvants. The dry conching treatment comprises a first step of simple malaxation of the refined paste with rise in temperature and then at least one second malaxation step with production of effects of rolling and shearing whose intensity increases progressively, each malaxation step being followed by a degassing step and the intensity of said effects of rolling and shearing being determined so that the means of regulation of the temperature of the material enable the latter to be maintained at the optimum level of conching and the particle size is preserved.

摘要: The invention provides a device (1) for processing and treating chocolate, with a container (2) and stirring means (3) arranged therein, wherein the container (2) has a processing interior (2a) with a cylindrical wall (4) and an outwardly curved bottom (5) and is set up obliquely, i.e., the center axis (ZA) of the cylindrical wall (4) is inclined with respect to the vertical, and wherein the stirring means (3) comprises at least one stirring arm (7), which is rotatable about this center axis (ZA), while projecting from the center axis (ZA) of the cylindrical container (4) at least also in the radial direction, and a conching tool (6), which is rotatably arranged at or near the bottom (5) or the lowest vertical point of the container (2) about a an axis of rotation (DA), and wherein the conching tool (6) rotates faster than the stirring arm (7) during operation. In a method according to the invention for processing and treating chocolate, it is provided that a starting mass or an intermediate product of chocolate is filled in an inclined cylindrical container (2) and rotating therein along with at least one stirring arm (7), which rotates about this center axis (ZA), while projecting from the center axis (ZA) of the cylindrical container (2) at least also in the radial direction, as well as processed simultaneously by means of a rotatable conching tool (6), which rotates faster than the at least one stirring arm (7) about an axis of rotation (DA), which is inclined relative to the center axis (ZA) of the cylindrical container (2). Furthermore, the invention provides for the use of a universal machine for processing and treating nutritional and food products, processing and treating chocolate, wherein the universal machine comprises a container (2) and stirring means (3) arranged therein, and wherein the container (2) has a processing interior (2a) with a cylindrical wall (4) and an outwardly curved bottom (5), and arranged obliquely, i.e. the center axis (ZA) of the cylindrical wall (4) is inclined with respect to the vertical, and wherein the stirring means (3) comprise at least one stirring arm (7), which is rotatable about the center axis (ZA) of the cylindrical wall (4), while projecting from the center axis (ZA) of the cylindrical container (2) at least also in the radial direction, and wherein it is further provided that the stirring means (3) comprise a conching tool (6) rotatably arranged at or near the bottom (5) of the container (2), in particular at or near the lowest point of the container (2) with respect to the vertical, and rotating faster than the stirring arm (7) during operation.

摘要: In the continuous conching of chocolate mass in a conche (10) it is important to ensure essentially constant contents of the conche (10). For this purpose, the infeed of starting material and/or the discharge of the conched chocolate mass is monitored, namely measured, especially by means of weighing. In response to the measurement results, the infeed or the discharge is controlled, especially by means of altering the conveying capacity of a compulsory conveyor (screw conveyor 21) for discharging the conched mass. The conched chocolate mass is dry, i.e. it contains neither lecithin nor cocoa butter. Lecithin is added in the region of the screw conveyor (21) which is followed by a mixing device (22).

摘要: A fast conched candy coating is prepared by heating fat to above the melting point thereof and mixing the fat with sugar, optionally with milk solids, emulsifiers, flavoring, cocoa or cocoa butter. The mixture is maintained above the melting point of the fat but below 150.degree.F. The heated mixture is then conched in a high speed shearing and mixing device wherein the solid particles of the mixture are sheared to 40 microns or less and the mechanical energy imparted during the shearing and mixing raise the conching temperature to between 190.degree.F and 250.degree.F in less than 30 seconds.

The measured inter-dependent operational parameters are mutually optimized and dynamically adjusted providing an optimal operation at least in terms of the characteristics of the end chocolate mass 7 and/or throughputs of the chocolate production line 11 and/or other operation conditions as energy consumption.
