An apparatus for the production of encapsulated bodies employing a dropping tank for a fluid to form the cores of the encapsulated bodies and a reaction tank containing a solution capable of forming gel skins upon contact with the core material in communication therewith. Double-walled cylindrical nozzles are arranged in a lower part of the drop tank, the inner and outer walls of the double-walled cylindrical nozzles being coaxial. A pressurized air feed pipe is in communication with an upper part of the dropping tank. The peripheral walls of the reaction tank are in the form of a double-walled cylinder whose upper peripheral portion of its inner wall contains a screen. A liquid feed pipe and a capsule discharge port are provided in communication with the interior of the reaction tank through lower parts of the double-walled cylinder. A liquid discharge port also is provided in communication with an annular spacing of the double-walled cylinder through its outer wall.The apparatus provides for obtaining a dispersion of encapsulated bodies without their mechanical separation from the liquid in which they are prepared.

Nut-like food compositions comprising a dispersion of oil droplets in a continuous phase of film-former are provided with substantially improved moisture resistance characteristics by employing an irreversibly heat-coagulable film-former, limiting the quantity of permanent plasticizer present in the formulation to a quantity no greater than the amount of heat-coagulable film-former, and exposing the dispersion to conditions sufficient to heat-coagulate the film-former and render it substantially less water soluble. The simulated nutmeats of this invention are particularly suited for use in moist food products.

Methods for forming simulated, shaped, edible products suitable for human and/or animal consumption, or as a bait for marine creatures; and simulated, edible products produced thereby. More particularly, improved processes of the foregoing character wherein an aqueous alginate solution containing one of a sterilant or a sterilant neutralizer, with or without other additives such, for example, as comminuted food products, offal, coloring materials, flavorings, attractants and/or species specific repellants or irritants for marine creatures, are mixed into an essentially homogeneous viscous solution with the viscous solution thus formed being introduced in a desired shaped configuration into a setting bath containing a metallic salt in aqueous solution wherein the setting bath includes the other of the sterilant or sterilant neutralizer, so as to: (i) substantially instantaneously "set" the shaped viscous solution upon contact with the setting bath in the shaped configuration in which it is introduced; (ii) sterilize the ingredients comprising the product thus formed; and (iii), neutralize the sterilant so as to permit the intended use of the product without danger of harm or irritation from hazardous residues; yet, wherein the product thus formed can be readily made indistinguishable from the real or natural product that it simulates in terms of appearance, texture, bite, taste, feel, olfactory and/or gustatory characteristics, and other sensory characteristics.
