Cutting assembly for a food product high speed slicing machine, the cutting assembly (1) comprising a cutter (10) which is rotative around a central axis (A) and comprises a support disc (11), connected by its center to a drive unit (20) through a central shaft (21) concentric with the central axis (A), and a blade (30) releasably attached to a periphery of the support disc (11) by a fixation device, the blade (30) having a spiral cutting edge (31) lying in a cutting plane perpendicular to the central axis (A) and coplanar with a product holder (2); wherein the blade (30) is a non-closed curved blade; and the cutter (10) includes at least one blade (30), defining at least one independent continuous spiral cutting edge (31) with a ξ ratio of at least thirty in at least most of the spiral cutting edge, so that the cut precision is improved.

A method is provided for automatically adjusting a cutting gap of a slicing machine for slicing strand-shaped product calibers from a food product into slices, wherein the slicing machine includes a blade motor for driving a blade about a blade axis, wherein the blade has a peripheral cutting edge which defines a blade plane, and a cutting frame with a counter edge for cooperation with the cutting edge. Under control by a controller and without contact of the blade to the food product to be cut, the method comprises: a) moving the blade along the blade axis in an approach direction to approach the cutting frame until contact with the cutting frame, b) stopping the approach movement of the blade, and c) moving the blade back in a spacing direction by a distance corresponding to a desired size of the cutting gap, measured in a direction of the blade axis.

A blade assembly includes a support frame, a cutting blade, a motor to drive the cutting blade, a support shaft operatively coupled to the support frame to permit pivotal movement of the support frame, and an actuator operatively coupled to the support frame to reciprocally move the slicing assembly between an extended position and a retracted position. When the slicing assembly is in the extended position, a plane of the cutting blade is substantially co-planar with a cutting plane of the food product, and the cutting blade slices the food product. Conversely, when the slicing assembly is in the retracted position, the plane of the cutting blade is disposed at a predetermined angle away from the cutting plane of the food product, and the cutting blade does not contact the food product.

A slicing machine includes an upper housing having feeder tube(s). A motor-driven cutting plate is horizontally attached beneath the upper housing for rotation and positioned to perpendicularly receive elongate food article(s) from the feeder tube(s) at a respective position offset from a center of rotation of the cutting plate. Reverse involute cutting blade(s) attached to the cutting plate that slices the elongate food article and having a cutting edge with an upward bevel. A curved slot formed through the cutting plate beneath the cutting edge to receive slices of the elongate food article. A base housing positioned below the upper housing has a turntable that supports a food substrate that receives the slices of the elongate food article.

A cutting device adapted to be placed above a gap extending across a carrying surface of a conveyor system with the cutting plane of the cutting device extending through the gap. The cutting device cuts food items into smaller food items via rotational movement of the cutting device while the food items conveyed by the conveyor system pass the gap. The cutting device includes an arm and a cutting blade mounted to one end of the arm. The opposite end of the arm is adapted to be mounted to a driving unit for supplying rotational movement of the arm and thus the cutting blade. A cutting edge side of the cutting blade engages with the food item under an angle such that the cutting blade exerts with a downwardly facing force onto the food item and towards the carrying surface of the conveyor system during the cutting.

A flow-propelled rotary knife system includes a housing, having an outlet end and walls defining a fluid passage, a rotatable blade holder, disposed at the outlet end and having a central aperture substantially aligned with the fluid passage, and at least one blade, extending diametrically across the central aperture of the blade holder. The blade holder is configured to rotate about a rotational axis passing through the central aperture, and the at least one blade has a twisted shape selected to rotationally propel the blade and the blade holder to rotate about the rotational axis when the blade is contacted by fluid flowing through the fluid passage and the central aperture in a flow direction, whereby objects propelled along the fluid flow path in the flow direction toward the outlet are helically cut by the rotating blade.

The knife edge (12) of the severing knife (2, 2′) has a cutting edge (20, 20′) which is at least portion-wise concavely curved in the longitudinal direction of the severing knife.

The disclosure relates to a cutting blade that is rotatably drivable and provided for machines for slicing food products, in particular high-speed slicers. With the aid of a mounting area surrounding a rotary shaft, the cutting blade is fixed to a drive shaft of the machine. A distance area is provided outside the mounting area but inside the cutting edge area. The disclosure aims at improving the cutting blade with respect to its stability and configuring it such that it has the lowest possible weight. For this purpose, alternately recessed and raised formations are provided in the distance area.

An apparatus for cutting food products. The apparatus includes a cutting device and housing thereabove that defines a passage with an opening in proximity to the cutting device for delivering the food product to the cutting device. The apparatus is preferably adapted to cut food products in a substantially horizontal plane, and as such the cutting device is preferably oriented to make a substantially horizontal cut through a food product. A lower portion of the housing has a lower extremity that defines the opening of the passage. The apparatus is equipped with various features that improve the operation of the apparatus and the consistency of the sliced product, particularly if the delivered food product varies in shape and size and may contain embedded stones.
