摘要: A donut icer or icing system is disclosed herein. The icing system is surprisingly more efficient than known methods of applying frosting to baked or fried goods, specifically, donuts. The increase in efficiency over known methods is accomplished generally through use of a plurality of conveyor belts, an icing bath, and a flip shaft assembly that allows frosted goods or donuts to flip icing side up before discharge from the system.

摘要: A hinged panel assembly includes a first panel that is selectively positioned against a first exposed surface of a cake when the cake has been cut. The first panel is comprised of a fluid impermeable material to inhibit air from contacting the first exposed surface thereby enhancing freshness of the cake. A second panel is hingedly coupled to the first panel such that the second panel is selectively positioned at a selected angle with respect to the first panel. The second panel is selectively positioned against a second exposed surface of a cake when the cake has been cut. The second panel is comprised of a fluid impermeable material to inhibit air from contacting the second exposed surface thereby enhancing freshness of the cake.

摘要: An automated accumulator incorporates independently operated infeed and outfeed ramps. These ramps on an internal end provide access to a plurality of storage flights that define a stacked conveyor, allowing both the upstream and downstream portions of the production line to operate relatively independently of the other. On the external end, the ramps couple to prior art conveyor systems. The automated accumulator incorporates an electronic control system combining a Programmable Logic Controller (PLC) or equivalent and a plurality of sensors in combination with various motors to provide suitable automated operation, including First In First Out (FIFO) operation to preserve production sequence. In addition, various techniques may be used to selectively control operation of the automated accumulator, providing such functions as stopping infeed on a particular product, or providing linear bypass through the accumulator.

摘要: Non-traditional dough, such as gluten-free, vegan dough, is processed to make high quality baked products in an industrial process. In the case of cracker production, a cracker finishing machine (100) is provided between a dough depositing machine and an oven to prepare the dough for baking. The dough is flattened to a substantially uniform thickness and moistened by the finishing machine (100). Baking trays (300) with deposited cracker dough are loaded onto a pedestal (120) and pressed against a platen (130) to provide the desired flattening. At the same time, a blotting belt (150) misted with cooking oil is interposed between the platen (130) and the dough for moisturizing.

摘要: A cake decoration mold assembly includes a collapsible housing that has a bottom wall and a perimeter wall coupled to and extending upwardly from a perimeter edge of the bottom wall. A shaft is positioned on a top edge of the perimeter wall of the collapsible housing such that the shaft extends between a first lateral side and a second lateral side of the perimeter wall of the collapsible housing. The shaft has a shaped cake decoration positioned on the shaft so the shaft may dry the shaped cake decoration. A roller is rollable over the cake decoration so the roller may flatten the cake decoration. A hook may be selectively coupled to the collapsible housing.

摘要: An oven contains a continuous chain of baking tongs that can be opened and closed, and locked in the closed state. The chain circulates in the oven and moves through the baking chamber in two transport planes, one above the other. A device for opening the baking tongs, a delivery station, a loading station, a device for closing the baking tongs, and a device for locking the tongs are successively arranged in the running direction of the baking tongs, in the front part of the oven, along the upper transport plane. A product removal device contains a flatly arranged rotating support and is arranged in the delivery station. The rotating support carries removal elements embodied as suction elements along the outer periphery thereof, which it uses to remove the baked products from the open baking tongs.

摘要: In some implementations, a cooler reduces the temperature of pressed dough balls after the pressed dough balls have been baked in an oven. The cooler may include multiple cooling conveyors arranged in a vertical stack with adjacent conveyors transferring the pressed dough balls in opposite directions. The cooler may include a safety release turnaround between each of the adjacent cooling conveyors to move the pressed dough balls between the adjacent conveyors in the cooler.

摘要: A system (1) and a method for cooling freshly baked bread under sub-pressure, which system includes: a sub-pressure chamber (2) which is adapted for receiving freshly baked bread for the cooling thereof; a sub-pressure source (3), such as a vacuum pump, which is connected to the sub-pressure chamber (2) for exhausting fluid from the sub-pressure chamber (2) and creating a sub-pressure inside it; a condenser (4) for cooling steam exhausted from the sub-pressure chamber and separate condensed water (19) from it. The system also includes a heating tank (5) with a first heat exchanger (6) in which the heat generated by the condenser (4) is used for heating water.

摘要: A continuous process for making a pita chip or other similar products using a continuous pressing step that occurs shortly after a continuous oven initial cooking step. Applicants' invention produces a final product with characteristics of a traditionally cooked pita chip using equipment that provides for significant increases in manufacturing throughput. The use of a continuous oven with the relatively concurrent pressing step allows for the production of a flat chip piece on a continuous product line.
