Abstract: Apparatus and method for pasteurizing food products and ready meals in hermetically sealed packages (22) by means of microwaves, comprising a microwave chamber (14); a lower conveyor belt (20) for the packages (22); an upper conveyor belt (18), extending substantially horizontally and vertically movable, and a microwave source (16) located below the lower conveyor belt (20), the microwave chamber (14) being under atmospheric ambient pressure. The apparatus comprises a cooling plate (10) in close contact with the upper conveyor belt (18) so that during microwave heating the top of the package (22) is cooled to below the condensation point of water vapor and overpressure in the package is avoided.

Abstract: A heating device and control method therefor. The device includes a cylinder for placing an object to be processed and an electromagnetic wave generating system for generating electromagnetic wave signals to heat the object. At each preset time interval, the electromagnetic wave generating system is controlled to adjust the frequency of the generated electromagnetic wave signal within a preset selectable frequency range, and ensure the system meets a preset matching condition. The frequency of the signal that meets the preset matching condition each time is recorded, and the change amount in frequency of the signal that meets the preset matching condition from before the preset number of matches to the current match is calculated. Operation of the system is terminated when any one of preset termination conditions is met. The preset termination conditions include the change amount being less or equal to a preset change threshold, enabling the cessation of heating of food at a state desired by the user, particularly suitable for food defrosting.

Abstract: Described herein are methods for determining the temperature and nutrient content of items heated in a microwave oven. An example method of determining the temperature of the item includes receiving item information; receiving a trained water model; measuring, by an antenna, an emission value from the exterior of the microwave; determining, the power flow into the item based on the trained water model, the item information, and the emission value; and estimating, by the trained water model, a temperature change of the item. An example method of determining the nutrient content includes receiving item information; receiving a trained water model; measuring, by an antenna, an emission value from the exterior of the microwave; determining an emission spectrum from the emission value; and determining, using the emission spectrum, the item information, and the trained water model, a nutrient profile of the item.

Abstract: In a method for treating food in a food handling device with a parameter configuration a measured value distribution of a surface property of the food is determined after expiration of the period of time by means of a sensor. The prediction pattern is formed by superimposing the measured value distribution with the respective pattern of change, and the parameter configuration is set for which the assessment value Bq meets at least one predetermined criterion.
