摘要: A concentrated coffee in single-serving container product and a method for manufacturing the product. An accommodation part of the container is filled with a concentrated coffee liquid. An opening of the accommodation part is sealed with a peelable lid material. The method includes blending a concentrated coffee liquid and a stabilizer, homogenizing the concentrated coffee liquid after the blending, a primary sterilization of the concentrated coffee liquid after the homogenizing, filling the accommodation part with the concentrated coffee liquid after the primary sterilization and sealing of the opening with the lid material, and a secondary sterilization of the concentrated coffee in single-serving container after the filling. In the filling step, a space other than that filled by the concentrated coffee liquid in the accommodation part is filled with an inert gas.

The aerated beverage composition comprises coffee having a weight percentage in a range of 0.1-20% with respect to the aerated beverage composition, at least one structurant having a weight percentage in a range of 10-40% with respect to the aerated beverage composition, at least one sweetener having a weight percentage in a range of 21-60% with respect to the aerated beverage composition, at least one solvent. The aerated beverage composition, when reconstituted with water, provides a creamy, frothy, and stable ready-to-drink beverage. The present disclosure also provides a simple and convenient process for preparing the aerated beverage composition.

摘要: A method for producing the preparation containing protocatechuic acid (PCA), chlorogenic acid (CGA) and caffeic acid (CA) having a high concentration from coffee cascara comprising: (i) preparing materials; (ii) mixing the coffee cascara ingredient with the sweetener ingredient, and the water ingredient, and then sterilizing to obtain a foundation mixture; (iii) admixing the composition of complex enzyme-probiotic with the foundation mixture, then hydrolyzing to obtain a hydrolyzed mixture; (iv) admixing the composition of complex enzyme-probiotic with the hydrolyzed mixture, then fermenting to obtain a fermented mixture; (v) filtering the fermented mixture for removing the solid part, and collecting the liquid part is a fermented solution; and (vi) concentrating the fermented solution to obtain a preparation containing PCA, CGA and CA having a high concentration from coffee cascara.

The upward flow extraction method can comprise loading extraction material into an extraction cell having a bottom portion and a top portion; introducing a first aliquot of extraction medium through the bottom portion of the extraction cell; expelling gas from the extraction cell through the top portion of the extraction cell; closing the top portion of the extraction cell and increasing the pressure in the extraction cell as extraction medium flows into the bottom portion of the extraction cell; stopping the flow of extraction medium into the extraction cell; steeping the extraction material in the extraction medium under pressure to produce an extract; and introducing a second aliquot of extraction medium through the bottom portion of the extraction cell to push extract through top portion of the extraction cell.
