    摘要: The present invention relates to a fibrous starch with enhanced emulsifying capacity and emulsifying stability, and low-fat mayonnaise and margarine compositions using the same. More specifically, disclosed are fibrous starch which has an increased starch particle size and exhibits improved emulsifying capacity and emulsion stability, prepared by heat-treating starch at a temperature lower than a gelatinization temperature, phosphorylating the starch and further heat-treating the starch sample at a high temperature, and low-fat mayonnaise and margarine compositions in which the content of cooking oil is reduced by 50% or more by adding the fibrous starch with enhanced emulsifying capacity thereto.

    摘要: The present invention provides dietary compositions for mammalian consumption. In particular, the present invention provides compositions comprising pectin, a component comprising electrolytes, thickening agents, a sweetening agent, and water, and methods for making such compositions. In some embodiments, the dietary compositions are used for preventing and/or treating malabsorption dysfunction and associated disorders (e.g., short bowel syndrome, Crohn's disease). In some embodiments, the dietary compositions are used for preventing and/or treating colonic disorders (e.g., ulcerative colitis). The dietary compositions further find use in subjects with diarrhea, regardless of cause, subject suffering from gastric dumping syndrome, and obese patients or patients seeking to lose weight, as the composition delays gastric emptying (e.g., creating feeling of early satiety). In some embodiments, the dietary composition is a prebiotic food supplement.

    摘要: Compositions which provide slowly digestible starch and a source of fermentable dietary fiber. Microparticles in which starch is entrapped in a crosslinked matrix to provide dietary benefit. Such microparticles are used to deliver glucose to targeted regions in the small intestine for beneficial physiological effects, and fermentable dietary fiber to the colon to improve colon health and to treat diseases of the colon. Microparticles can be employed to selectively deliver fermentable dietary fiber to targeted portions of the colon. A method for making the microparticles is provided as well as methods for using the microparticles for controlled digestion of starch on ingestion in the small intestine and methods for using the microparticles to deliver dietary fiber. The microparticles with entrapped starch provide a low glycemic index and extended glucose release in food products and food ingredients. The microparticles with entrapped starch can, in particular, be used as an ingredient in foods that are to be cooked.
