The dough-like confectionery material is an effective replacement for panned coatings, and it can be applied to an edible substrate, such as candy or chewing gum to form a layered confection. Methods and apparatus for forming layered confections are also described.

The present invention pertains to a method of producing a compressed tablet in a rotary tablet press. The method including the steps of adding a first powdered portion of tablet base material into a punch die of a rotary tablet press, pressing the first tablet base material by means of an upper and a lower punch to obtain a first pressed material, inserting an object at the upper face of the first pressed material and fixing the object in a central cavity of the first pressed material, adding a second powdered portion of tablet base material into the punch die of the rotary tablet press, and pressing the first and second tablet base material around the object to enclose the object from the surface of the tablet. The object is based on a material different from the first and/or the second powdered portion of tablet base material.

Low density chewing gums having a density of less than 0.60 g/cc comprise at least 50% polymer and less than 40% bulking agent and filler combined. The low density chewing gum may be produced by mixing the ingredients with supercritical fluid carbon dioxide and cooling the mixture. The mixture may optionally be cut into pieces and coated.

The present disclosure provides an apparatus and method for the continuous production of center-filled confectionery products. The apparatus may include an extruder for forming a continuous extrudate having a plurality of center-filled confectionery ropes. The apparatus may also include a forming device for forming individual confectionery pieces, and sealed center-filled confectionery pieces in particular. The forming device provides improved coordination and control of extrudate formation and extrudate feed into the forming device. The apparatus and method of the present disclosure increases product output and reduces the amount of unacceptable product.

A gum product comprises a soft gum core having a plurality of regions of different colors visible on an outer surface of the core, and a crunchy edible coating covering the outer surface of the core, the coating being substantially transparent such that the core regions of different colors are visible through the coating. The regions of different colors can also have different flavors. The coating preferably is formed of sorbitol and is free of any whitening agents that would make the coating opaque.

Delayed release in chewing gum of a food-grade acid, is provided by encapsulating the food-grade acid in specific amounts of a poly(vinyl acetate) and a fatty acid salt. When incorporated into a chewing gum, the food-grade acid encapsulated in poly(vinyl acetate) and fatty acid salt provides a more delayed release of a sour flavor than food-grade acid encapsulated in poly(vinyl acetate) alone.
