The present invention provides a method of reducing acrylamide in an aqueous coffee extract, the method comprising: contacting an acrylamide-containing aqueous coffee extract with spent coffee grounds at a temperature of 70 to 120° C. for at least 30 minutes to form an acrylamide-depleted coffee extract.

A coffee milling process comprising the steps of: a) introducing particles of a roasted coffee precursor into a milling chamber; b) introducing particles of soluble coffee into the milling chamber; c) jetting a gas into the milling chamber to mobilise the particles of the roasted coffee precursor and soluble coffee; d) thereby producing a milled and blended coffee product by comminuting the particles of the roasted coffee precursor by self-collision of the particles of the roasted coffee precursor and by collision of the particles of soluble coffee with the particles of the roasted coffee precursor within the milling chamber. Processes and products incorporating milled and blended coffee products are also described.

The invention relates to a soluble coffee beverage powder, which, upon the addition of water, is capable of forming a coffee beverage having a foamed upper surface. The soluble coffee beverage powder includes a soluble gas containing matrix comprising soluble coffee solids and a soluble filler, with the soluble filler constituting at least about 35% by weight of the dry matter of the matrix in order to increase the volume of the soluble coffee beverage powder incorporating gas. A particular preferred filler is an oligofructose that has a good solubility and which positively influences on the taste of the prepared coffee beverage. The invention also relates a soluble coffee beverage powder providing a black foamed coffee. The invention also provides a process for preparing such a soluble coffee beverage powder.

A self-whitening spray dried instant coffee is prepared by spray drying a caseinate-free aqueous emulsion having a pH of 5.5 to 9.0 and consisting essentially of 30-80% water and 20-70% solids, wherein the solids contain, on a dry weight basis, 10-70% soluble coffee, 5-60% oil, 0-85% filler, and 0-10% emulsifier.

Liquids, such as juices, milk, molten metal and the like are concentrated by forming uniformly-sized, small droplets in a precision droplet forming assembly (14) and deploying the droplets in free fall downwardly as a central column within an evacuated tower (12) having cool walls (32). A portion of the solvent evaporates. The vapor flows to the wall (32), condenses, and usually flows down the wall as a film (62) to condensate collector (26) and drain (28). The vertical column of freely-falling droplets enters the splash guard (68). The condensate can be collected, sent to other towers or recycled.

The present invention relates to a method for producing an instant coffee, the method comprising: providing a finely ground roasted coffee material; providing an aqueous coffee extract; mixing the finely ground roasted coffee material with the aqueous coffee extract to form a first mixture; and drying the first mixture, wherein, before drying, the finely ground roasted coffee material: (i) is heated to a temperature of from 70 to 100° C. in an aqueous environment; or (ii) is maintained at a temperature of from 5 to 70° C. in an aqueous environment for a duration of at least 1 hour.
