摘要: The present disclosure relates to oat-based peanut butter-flavored compositions and methods of making such compositions. In particular, a method is disclosed of roasting substantially intact groats until CIELAB L*-value change per minute, and CIELAB b*-value change per minute achieve a negative slope to produce roasted oats having a peanut butter flavor. Compositions including roasted oats having a peanut butter flavor are also disclosed.

摘要: A swollen composition contains a starch derived from pulse and/or cereal and satisfies the following conditions (1) to (5). (3) Dietary fiber content is not less than 3.0 mass % in terms of moistened mass. (4) When at least one frozen section A of the composition obtained under specific conditions is observed, a ratio of a weighted average area with respect to a weighted average perimeter length in void regions of an area of not less than 10,000 μm2 with respect to a composition cross-section image area, is not less than 100. (5) A ratio of value α to value β is not less than 0.3.

摘要: A method and system for producing a high protein meal from a whole stillage byproduct produced in a grain dry-milling process for making ethanol, with optional back end milling options, is disclosed. In one embodiment, a method for producing a high protein meal from a whole stillage byproduct includes separating the whole stillage byproduct into an insoluble solids portion and a thin stillage/centrate portion, wherein at least one milling step can be applied to one or both of the insoluble solids portion and the whole stillage portion. Next, the centrate portion may be separated into a protein portion and a water-soluble solids portion. And then the protein portion can be dewatered and/or dried to define a high protein meal having at least 40 wt % protein on a dry basis.
