Abstract: A process for the accelerated aging and integrated flavoring of alcoholic beverages with selective control over the final flavor profile is described using size-reduced wood and plant-based biomass products in a rapidly-recirculating system at or above atmospheric pressure with the availability of gaseous, liquid, or solids introduction and accentuated by solids sonication and/or ultrasonically-enhanced alcoholic beverage homogenization and/or chemical reactions and with a much-reduced consumption of wood and plant-based biomass.

Abstract: A rapid method of brewing malt beverages having 0.0% alcohol by volume with the use of yeast in aerobic conditions. The yeast is inactivated by boiling after undergoing fermentative growth, during either aerobic or anaerobic conditions. Aspects of the beverage such as sweetness, aldehyde content, flavor-positive components, pH, mouthfeel and heat are controlled to emulate popular styles of beer. The beverage may also be fortified with alcohol to create alcoholic products, such as beer, kombucha, hard seltzer, wine spirits in a rapid time frame.

Abstract: Methods and systems are described that produce an ultra-high gravity alcoholic beverage from a high gravity alcoholic beverage stream using an efficient, low waste, combination reverse osmosis and forward osmosis system. Utilizing a reverse osmosis system prior to using a forward osmosis system in removing water content from a high gravity alcoholic beverage stream significantly reduces a draw solution load when compared to a process that utilizes a forward osmosis system alone or prior to using any other dewatering system.

Abstract: Enhancing a spirit by mixing in one or more other spirit during manufacturing is disclosed. The primary spirit, i.e., the spirit being enhanced, and the one or more additional spirits, i.e., the secondary spirits, can be a distilled spirit, a non-distilled spirit, an aged spirit, a finished spirit, a spirit that is neither aged nor finished, and any combination thereof. In one aspect, the disclosure provides a method of producing a spirit enhanced spirit (SES). In one example, the method includes: (1) obtaining a primary spirit, (2) adding one or more secondary spirit to the primary spirit, wherein the one or more secondary spirit is a different type of spirit than the primary spirit, (3) placing the primary spirit and the one or more secondary spirit in a bottle, wherein combination of the primary spirit with the one or more secondary spirit produces a SES, and (4) sealing the bottle.

Abstract: Producing a dealcoholized beverage from its alcoholic beverage starting product and plant for implementing the method, which comprises the following steps: separating the beverage starting product into an alcoholic and aromatic permeate and into an aromatic and almost alcohol-free retentate in a permeation module by non-thermal permeation, dealcoholizing the permeate in a module intended for that task, and finally mixing the dealcoholized permeate with the almost alcohol-free retentate in a final-mixing module. Prior to the dealcoholizing, aroma compounds are removed from the aromatic and alcoholic permeate by cold adsorption in an aroma adsorber, resulting both in an aroma phase and in an aroma-free but alcoholic permeate which, however, has the alcohol removed from it by alcohol separation, resulting in an aqueous, largely dearomatized and dealcoholized permeate water phase. Final mixing of aroma phase, permeate water phase and retentate takes place in the final-mixing module to give a dealcoholized beverage.

Abstract: Methods of separating components traditionally considered as waste material from mold-fermented compositions are described. The waste components can be separated either from unfiltered compositions or from a separation stream separated from a composition. In some embodiments, filamentous fungus used in the production of the mold-fermented composition is specifically targeted for separation. Incorporation of separated waste components into various products are also described herein. In some embodiments, the separated components are used in alternative meat products and other foods designed for human consumption. Separated components can also be used in animal feed, as feed stock for other fermentation processes, or for use in treating food, creating cosmetics, or chemical processes.
