    摘要: A high gravity non-alcoholic beverage is disclosed having an ABV between about 0.1% to about 0.8% or between about 3% to about 6%, a real extract by weight between about 15% to about 70%, and an ethyl acetate amount between about 1 to about 500 mg/l. A method for producing the high gravity non-alcoholic beverage from a starting liquid includes providing a set of reverse osmosis pressure vessels, each pressure vessel having a feed inlet, a retentate outlet, and a permeate outlet, the set having a first pressure vessel, providing the starting liquid to the feed inlet of the first pressure vessel, adding water at a blend point when ABV content in a selected one of the permeate streams exceeds ABV content of a retentate stream at the blend point, and obtaining the high gravity non-alcoholic beverage from a selected one of the retentate streams.

    摘要: A fermentation apparatus for preserving the aroma of a fermentable beverage is provided. The fermentation apparatus comprises a flow passage fluidly connectable to the headspace located above a fermentable beverage in a fermentation container. A carbon dioxide scrubber in the flow passage receives a headspace fluid mixture comprising at least carbon dioxide gas and an aromatic fluid originating from the fermenting beverage. When the headspace fluid mixture contacts the carbon dioxide scrubber, the carbon dioxide scrubber retains a modified fluid in the flow passage. The modified fluid has a lower carbon dioxide gas concentration and a higher aromatic fluid concentration than the headspace fluid mixture. The flow passage directs the modified fluid back to the headspace to at least partially retain the aromatic fluid in the fermentable beverage in the fermentation container. A method for preserving the aroma of a fermentable beverage is also provided.

    摘要: The invention provides a process of producing a non-alcoholic beer comprising the steps of: fermenting the wort with live yeast to produce a fermented wort; subjecting the fermented wort to one or more further process steps to produce a non-alcoholic beer; and introducing the non-alcoholic beer in a sealed container; wherein either the fermentation produces a non-alcoholic fermented wort or wherein the fermentation produces an alcoholic fermented wort and alcohol is subsequently removed to produce a non-alcoholic fermented wort or a non-alcoholic beer; and wherein the heated wort, the non-alcoholic fermented wort and/or the non-alcoholic beer is contacted with a hydrophobic silicate-based molecular sieve. Flavour substances contributing to undesirable flavour notes in non-alcoholic beer can be removed effectively during production by contacting wort before or after fermentation with a hydrophobic silicate-based molecular sieve, provided the wort contains virtually no alcohol.

    摘要: The present invention provides methods and for the dealcoholization of alcohol containing solutions, especially fermented beverages. In preferred embodiments the methods employ a novel controlled-strip evaporative perstraction technique following initial clarification to remove biomass, wherein strip solutions, dealcoholized beverage, or both are recycled for use in the strip solutions for dealcoholization of subsequent batches of feed beverage. In further preferred embodiments additives are introduced into the strip solution to further limit loss of volatile components during perstraction. Biomass removed by the clarification is then returned to the retentate product following perstration.
