    Abstract: A shelving system for a cooking appliance, such as a smoker or grill is disclosed. A convertible and removable shelf may be coupled to a frame in a variety of positions and orientations. The convertible shelf may be extended and locked into a first position at a first location or pivotally lowered to a second position without removing the shelf. Additionally, the shelf may be removed from the first location and secured to a second location providing a storage surface. The flexible location and orientation of the convertible shelf provides for more efficient and economical storage and portability of the appliance.

    Abstract: An apparatus is provided for curing and more specifically for cold smoking meat or seafood with a blend of filtered smoke from an organic smoking material such as softwoods such as pine or tropical palms such as coconut wood or such as mixed wood sawdust from a sawmill, that are not traditionally used for smoking seafood or meat due to the harsh flavor imparted by their smoke, and unfiltered smoke from a second organic smoking material such as hardwood smoke, or other pleasant flavor-imparting smoke. The blending of filtered smoke from a first organic smoking material such as coniferous softwood, tropical palm wood or mixed sawdust from a sawmill with unfiltered pleasant flavor-imparting smoke from the second organic smoking material reduces the cost of the smoking and curing process and allows versatility in application in terms of preservative properties and flavor imparted to the cured meat or seafood.

    Abstract: A smoke trap includes a receptacle with a floor opening, a tubular riser surrounding the opening and extending from the floor into a receptacle cavity, and a capping element disposed over an aperture in a riser. The capping element has an upper wall and a side wall partially bounding a body cavity and extending from the upper wall toward the floor. The capping element covers the aperture from above and from the side without fluidly sealing the aperture such that the aperture is in fluid communication with the body cavity and the body cavity is in fluid communication with the receptacle cavity. A portion of the side wall extends past the aperture such that the aperture is disposed within the body cavity. Grease management systems that include the smoke trap have means for transferring grease into the receptacle cavity to inhibit smoke from escaping the receptacle cavity through the opening.

    Abstract: A method of making precooked meat pieces using a hybrid cooking system comprises preheating meat pieces to a temperature of at least approximately 140° F. to create preheated meat pieces. The preheated meat pieces are transferred to an oven heated with an external heating source. The oven includes internal surfaces, and the external heating source assists in keeping the internal surfaces at a temperature below a smoke point of fat from the meat pieces. The preheated meat pieces are cooked in the oven to a water activity level of 0.92 or less to create precooked meat pieces. Optionally, flavoring could be applied to the precooked meat pieces after the precooked meat pieces have been removed from the oven and before the precooked meat pieces have cooled.

    Abstract: A smoking device can include one or more walls defining, at least in part, a combustion cavity, a lower inlet connecting the combustion cavity to an air source, a first flange defining, at least in part, a first recirculation channel open to an upper side of the combustion cavity, a second flange defining, at least in part, a second recirculation channel open to the upper side of the combustion cavity, and an upper inlet connecting the upper side of the combustion cavity to the air source and disposed between the first recirculation channel and the second recirculation channel. While a flame is generated within the combustion cavity, a convection flow from the flame can be directed to the first recirculation channel and the second recirculation channel and past the upper inlet to reduce the upper flow of air from the upper inlet until the flame is reduced.
