A meat skinning machine has a frame with an elongated skinning blade mounted thereon. The skinning blade has an elongated cutting edge. An elongated gripper roll is rotatably mounted on the frame adjacent the blade for pulling the meat product to be skinning into operational contact with the cutting edge of the blade. A plurality of rows of teeth extend longitudinally on the outer surface of the roll with each row of teeth terminating in a cutting edge. The foregoing structure is conventional. A plurality of secondary teeth are formed on the cutting edges of the rows of teeth to facilitate the gripping of a meat product. The secondary teeth are smaller than the teeth in the rows of teeth. The cutting edge of the blade is comprised of a plurality of serrated teeth.

A method of applying liquid, such as liquid smoke to the outer surface of an extruded sausage strand, involves locating a rotatable inner tube within a stationary outer tube; rotating an elongated casing on the stationary outer tube, and advancing the casing longitudinally over a discharge end of the inner tube; simultaneously rotating the inner tube within the outer tube and extruding a meat emulsion strand in a rotatable direction out of the discharge end to move the rotating meat emulsion into the rotating casing; and introducing a fluid material on the inside of the casing material for deposit on a strand of meat emulsion being discharged from the discharge end of the inner tube. The casing material is of the non-osmosis type. The casing and discharged meat emulsion rotate in the same direction at the same speed. A fluid, such as liquid smoke, is introduced between the rotating casing and the rotating strand of meat, which rotate in the same direction and at the same speed to prevent any turbulence from developing in the meat emulsion. The lack of turbulence prevents the liquid smoke from becoming mixed into the meat emulsion.

The meat skinning machine of this invention comprises the conventional components of a frame with a rotatably powered gripping roll having a cylindrical peripheral surface mounted thereon. A plurality of gripping teeth are formed on the peripheral surface of the gripping roll. An elongated blade holding means is mounted on the frame and extends parallel to the gripping roll and is positioned closely adjacent thereto. An elongated blade is secured to the blade holding means, with the blade having a forward edge portion protruding from the blade holding means and terminating in an elongated sharp cutting edge. The cutting edge of the blade is closely adjacent the teeth on the gripping roll. An elongated plate is on the blade holding means either as an integral part or an attachment thereto. The plate has a forward edge and an upper surface. The forward edge of the plate comprises a shoulder extending along the blade and being closely spaced rearwardly from the cutting edge of the blade to hold meat passing rearwardly thereover up and away from the teeth of the gripping roll as any membrane or skin on the meat is severed from the meat by the cutting edge of the blade. The plate can comprise a plurality of forwardly extending spaced teeth having outer spaced tips with the forward most portions of the tips collectively comprising the shoulder and forward edge of the plate.

A method of lubricating the passage of meat emulsion through the stuffing horn of a meat emulsion encasing machine is disclosed, involving forcing meat emulsion under a first magnitude of pressure through a passage into the inlet of a stuffing horn; then providing a first concentric ring of fluid under a second magnitude of pressure around the passage; and then providing a second tapered concentric ring of fluid around the passage with the tapered concentric ring having an outer perimeter of greater depth than its inner perimeter, and with the outer perimeter being in communication with the first concentric ring and its inner perimeter being in communication with the passage. The fluid in the rings is then subjected to a second magnitude of pressure which is greater than the magnitude of pressure imposed on the meat emulsion with the second magnitude of pressure being sufficient to cause the fluid to exit along the entire inner periphery of the second tapered concentric ring to form a fluid film between the meat emulsion and the internal surface of the stuffing horn. An apparatus for performing the method is also disclosed.

A method for encasing a meat product and removing air particles therefrom by forcing a plastic meat emulsion through a stuffing horn having an exit end with an elongated casing slidably mounted in close spaced relationship on the horn so that the meat emulsion extruded through the exit end of the horn will fill the elongated casing adjacent the exit end. The space between the exit end of the horn and the casing is subjected to a negative pressure so that air in that space is removed, and so that air in the meat emulsion extruded through the exit end will be removed. A machine for encasing meat products comprising a frame, a pump means on the frame for pumping meat emulsion under pressure, and a hollow elongated stuffing horn connected to the pump means so that meat emulsion under pressure can flow into the stuffing horn. The stuffing horn has an exit end, and is adapted to telescopically receive an elongated casing on its outer surface with the casing being adapted to be filled with meat emulsion extruded from the exit end of the stuffing horn. A vacuum means adapted to be connected to the space between the casing and the outer surface of the stuffing horn is provided to remove air from between the exit end of the horn and the casing and to remove air from meat emulsion extruded from the exit end of the horn into the casing.

The blade means involves an elongated blade element having a tapered cutting edge portion terminating in a cutting edge, and upper and lower surfaces. The blade element includes a heel portion comprising an elongated edge surface terminating in a lower heel line which is parallel to the cutting edge of the blade. The angle between the cutting edge and the heel line is greater than the angle comprising the tapered cutting edge portion. Preferably, the angle comprising the tapered cutting edge portion is in the order of 30.degree. or less, and the angle between the cutting edge and the heel line is in the order of 20.degree.-45.degree.. One embodiment of the invention provides a blade with a plastic strip partially adhered to the underside of the blade. A shoulder on the strip provides a heel line. The free edge of the blade is received in a slot in the skinning machine shoe, and the free edge of the strip conforms to the arcuate lower surface of the shoe.

The encased product of the present invention comprises an elongated flexible casing cylindrically shaped substantially along its length and having opposite end closures. A product material fills the cavity formed by the flexible casing and maintains the casing in a cylindrical shape. The cylindrical casing is formed from an elongated strip of flexible material having opposite side edges, the strip being formed into a plurality of helical revolutions with the side edges of the strip within each one of the helical revolutions frictionally overlapping and engaging the side edges within adjacent helical revolutions of the strip.The product is formed by continuously applying an elongated flexible ribbon to the outer cylindrical surface of a stuffing tube at a canted angle with respect to the longitudinal axis of the tube and rotating the flexible ribbon at the point where it is applied to the stuffing tube so that it will wrap around the tube in a plurality of helical revolutions to form a cylindrical casing on the tube. The adjacent edges of the helical revolutions of the ribbon are frictionally overlapped to one another so as to form a cylindrical casing and product is forced through the tube from the rearward end to the discharge end and into the cylindrical casing. The stuffing tube may be a rotating stuffing tube or it may be a stationary stuffing tube. A ribbon feed device is provided for feeding a continuous strip of ribbon to the stuffing tube.

An apparatus for encasing a product including a product encasing machine, linking apparatus, and a looping apparatus. The product encasing machine includes a rotatable stuffing tube having a fine head mounted on its forward end. The fin head imparts rotational drive and longitudinal drag to the casing as the casing passes thereover as the casing is being filled. The rearward end of the stuffing tube is mounted in a socket type apparatus to permit the stuffing tube to be pivotally moved upwardly and laterally to facilitate the installation of the folded casing thereon. A member is also provided for fluidly lubricating the interior surfaces of the stuffing tube to prevent product smear. The linking apparatus includes a pair of loop members carrying pinching members thereon. The pinching members are constructed of a moldable material and are detachably mounted on the loop members. The pinching members include pinching surfaces adapted to engage and collapse the rotating casing issuing from the encasing machine. The pinching surfaces each include at least one portion in vertical alignment with the longitudinal center line of the loop on which it is carried so that it will travel at a uniform velocity as it is carried by the loop members. A separate control member is provided for the rotating stuffing tube to permit the stuffing tube to be separately controlled as to speed independent of all other drives.
