摘要: This invention provides compositions for flat icings. The compositions comprises a gum system comprising Gum Arabic, carboxymethylcellulose and optionally, Gellan gum. The composition can be used as a flat icing for baked products such as doughnuts. Also provided is a method for using the composition as a flat icing and as a glaze.

摘要: A system for coating fruit with a substance utilizing a vat that stores a coating substance which can be applied via a dipping process. A dipping cover having a rim is provided for engaging an upper rim of the vat. A dipping tray carries a plurality of fruit items and includes a plurality of receptacles for carrying the fruit items. The dipping tray has a profile smaller than the interior of the vat allowing the dipping tray to be lowered so that the coating substance contained within the interior of the vat may engage the fruit. The dipping cover is configured for supporting the dipping tray in an elevated position once the fruit has been coated allowing excess coating to be vibrated off the dipped fruit.

摘要: A fountain for heating and distributing fluidic material is manufactured using various processes and materials. In one embodiment, the fountain includes a heating element encased in an enclosure. A basin containing a medium, such as chocolate, is removably mounted to the enclosure so that the basin is heated by contact with the enclosure. Additionally, an auger having a spiral flight rotates and lifts the melted chocolate upward to a top end of a cylinder that houses the auger. One or more tiers may be mounted, using various locking mechanisms, onto the cylinder to divert flow of the medium. A smaller chocolate fountain that may advantageously be more suitable for home use is also described herein.

摘要: An impregnated food in which a solid edible material is impregnated with a liquid food having a viscosity of 10,000 to 100,000 mPa·s at 35° C. has a good taste of the liquid food, has nevertheless a not hard texture, and achieves a sense of unity between the solid edible material and the liquid food. The impregnated food can be produced by a process for producing an impregnated food, wherein in a hermetically closed system, the system is pressurized in a state where a solid edible material is made contact with a liquid food, and then, the pressure in the system is returned to the atmospheric pressure.

摘要: A fountain for heating and distributing fluidic material is manufactured using various processes and materials. In one embodiment, the fountain includes a heating element encased in an enclosure. 摘要: A fountain for heating and distributing fluidic material is manufactured using various processes and materials so that the fountain is more easily cleaned and sanitized, has improved performance, and is easier to assemble. In one embodiment, the chocolate fountain includes a heating element encased in an aluminum enclosure. A basin containing chocolate is heated by contact with the aluminum enclosure. In one embodiment, an outer wall of the basin extends outward at an increased angle from the bottom surface of the basin, as compared to currently available fountains. Accordingly, the basin is configured to reduce an amount of chocolate that is necessary for proper operation of the fountain. In addition, the basin may be more easily cleaned and sanitized than other basins that include recesses in which chocolate, or other material, may pool.

摘要: A fountain for heating and distributing fluidic material is manufactured using various processes and materials so that the fountain is more easily cleaned and sanitized, has improved performance, and is easier to assemble. In one embodiment, the chocolate fountain includes a heating element encased in an aluminum enclosure. A basin containing chocolate is heated by contact with the aluminum enclosure. Because the aluminum enclosure has a relatively high thermal conductivity, the basin is heating substantially uniformly, thus reducing the occurrence of hot spots. Additionally, a plastic auger having a spiral flight rotates and lifts the melted chocolate upward to a top end of cylinder that houses the auger. The use of a plastic auger advantageously eliminates welding artifacts on the auger, such as burrs and pits, on which melted chocolate may accumulate. Accordingly, the plastic auger is easy to clean. A smaller chocolate fountain that may advantageously be more suitable for home use is also described herein.

摘要: A product conveying and coating system includes at least first and second, sequentially arranged conveyor belts, with at least the second conveyor belt being a solid belt. Interposed in a gap between the first and second belts is a dispenser head of a coating manifold. The dispenser head spans the gap between upper surface portions of the first and second conveyor belts, with an elongated side wall outlet portion of the dispenser head being exposed, in a downstream direction of the overall conveyor unit, to the upper surface of the second conveyor belt. The system provides for dispensing of coating material directly onto the second, solid conveyor belt and enrobing at least bottom and partial side portions of food products upon the solid belt. Provisions are made for scraping from the solid belt, removing from the coated food products and recycling excess coating material.
