A method, wherein a first level of at least two knives (4) starts cutting the vegetable or fruit to be cut, followed by at least a second level of a preferably corresponding number of knives (4) and having the same internal distance in between the knives in every level.

    摘要： A combination slicing and dicing food processing device. The device generally includes a cutting box and gliding body which travels back and forth across the cutting box. The gliding body features a food cradle that is configured to hold a food product which is to be processed. The food cradle is attached on one end of a principal cutting arm and a handle is attached to the other end of the principal cutting arm. A secondary cutting arm is provided beneath and attaching to the principal cutting arm. A ram is provided on the end of the secondary cutting arm and positioned slightly behind the food cradle so that the rain trails the food cradle as the food gliding body travels back and forth across the cutting box. The cutting box includes a principal cutting blade near one end and a process slot for receiving slices of the food product which are sliced off by the principal cutting blade. The slices are received in a collapsing bin in front of the ram before they are finally processed by a dicing card or julienne cutting card and received in a receiving bin.

A second elongate tower assembly (60) is also mounted for rotation relative to the table (12) and is spaced from the first tower assembly (50). The second tower assembly (60) is moveable towards and away from the tower (50) by roller wheels (42 and 43) which engage on guide rails (34 and 36) to enable the second tower assembly (60) to be moved. The second tower assembly (60) and the first tower assembly (50) are rotatable to set the tower assemblies at a predetermined angle with respect to the table (12) and carry saws for making a cut in the workpiece. Ram assemblies (130 and 160) on each tower enable movement of the workpiece downwardly relatively to the saws so that the workpiece is driven past the saws and cut by the saws.

A carriage is provided which is guided for movement toward and away from the cutters in a direction parallel to the axis of rotation of the potato and a driving motor is mounted on the carriage for movement therewith, the driving motor having a driven shaft which terminates in the potato-engaging and supporting element having prongs for engaging the potato to support the same and cause rotation thereof with said shaft.
