摘要: A shrimp processing system to wash, peel and devein the shrimp includes a housing, a conveyor system affixed to the housing and having a pathway to receive the shrimp, a motor connected to the conveyor system to transport the shrimp through the pathway, a pair of blades affixed to the housing on opposing sides of the pathway to score the shell proximate the tail portion of the shrimp, a cutter affixed to the housing to slice the shrimp to expose the vein, a high-pressure washing station connected to the housing to direct water at the shrimp to wash out the vein and loosen the shell, and a pair of cylindrical brushes connected to the motor and secured to the housing on opposing sides of the pathway to enable the removal of the shell from the shrimp.

摘要: A clamp assembly for a shrimp processing machine includes a center bracket and first and second clamps. The center bracket defines a support surface for supporting a shrimp. The first and second clamps are mounted relative to the center bracket and movable between an open position and a closed position. The first clamp includes a first jaw including a first engaging surface for engaging a first side shell portion of the shrimp in the closed position. The second clamp includes a second jaw including a second engaging surface for engaging a second side shell portion of the shrimp in the closed position. Additionally, a shoulder extends from the second jaw away from support surface of the center bracket for applying a force to the shell when the second clamp moves toward the closed position to roll the shrimp toward the first clamp and tear the shrimp shell.

摘要: An apparatus and method for mechanically belly-cutting shrimp to precise depths for shrimp of various sizes. The apparatus includes a motorized circular cutting blade; a curved guide channel adjacent the circular cutting blade for receiving a shrimp body and guiding the shrimp body to the circular cutting blade; and motorized flexible disks adjacent to the blade and the guide channel for gripping the shrimp body and propelling the shrimp body along the guide channel. The curvature of the guide channel longitudinally stabilizes the shrimp body while a V-shaped cross-section laterally stabilizes the body, ensuring that the body arrives at the blade in the proper orientation. The guide channel may be adjusted to provide belly-cuts to desired depths on shrimp of various sizes.

摘要: A method of preparing shrimps includes boiling them at a pressure exceeding atmospheric pressure, at a temperature exceeding the boiling temperature of water at atmospheric pressure, for keeping the meat of the shrimps in a compressed state while causing the meat to solidify and loosen from the shells of the shrimps. The shrimps are then rapidly cooled for causing the meat to be separated from the shells in an area behind the head of the shrimp and above the tail. Subsequently, the shrimps are peeled by mechanically opening the shells for allowing the meat contained within the shells to fall out. The meat is separated from the remains of the shrimps, including shell parts and eggs, by introducing the meat and remains into a separation liquid, causing the meat to float on the separation liquid while allowing the remains to sink. Finally, the meat is removed from the separation liquid.

摘要: Apparatus for more efficiently pre-cooking and peeling cold water shrimp such as the species Pandalus borealis is disclosed. The apparatus includes a conveyor for moving the shell-on or unpeeled shrimp up and out of a feeder tank. A perforated horizontal conveyor then carries the shrimp over a steam manifold with a multiplicity of apertures such that steam escapes from the manifold and rises through the perforated belt and surrounds the shrimp.A cooking chamber which completely encloses the horizontal conveyor except at the bottom, contains the lighter-than-air steam such that the raw shell-on shrimp are at least partially cooked by the surrounding steam. Since the lighter-than-air steam excludes all air from the cooking chamber, less oxidation of fats occurs and consequently a higher quality product is obtained. The shrimp are then immediately deposited by the perforated conveyor at the entry point of an automatic shrimp peeling machine, such that the shrimp have their shell removed or are peeled while still hot.
