    Abstract: Described herein are devices and methods for cooking and supporting meat and poultry with a meat and poultry support rack. The meat and poultry support rack comprises a meat and poultry support element, a first stand element, and a second stand element. The meat and poultry support rack preferably holds meat or poultry above a cooking pan, on an angle, enabling even, fast cooking, and retaining juices in the meat and poultry. The meat and poultry support rack comes apart into three pieces for easy storage and cleaning.

    Abstract: A roaster for roasting food over a campfire is disclosed. The roaster may include one or more prongs located at the roaster forward end, a knob located at the roaster rear end, a rod attached to the knob, a dispensing plate slideably mounted on the prong(s) and attached to the rod, a longitudinal tube attached to the prong(s), a forward handle, a rear handle, and a spring between the knob and the rear handle and surrounding the rod. The rod may pass fully through the forward and rear handles and the longitudinal tube. The longitudinal tube may pass fully through the forward handle and only partially through the rear handle. Moving the knob and attached rod forwardly may cause the dispensing plate to move along the prong(s). The rear handle, the longitudinal tube, the prong(s), and the dispensing plate rotate relative to the forward handle.

    Abstract: A smoking skewer for imparting a smoke flavoring to an interior of a food item is disclosed. The smoking skewer includes an elongate hollow rod, a food penetrating point at the distal end and a handle is at the proximal end. An opening is also provided at the proximal end of the elongate hollow rod. A plurality of apertures are disposed in a spaced apart relation along the elongate hollow rod are dimensioned to convey a smoke source from the interior cavity to the exterior surface of the elongate hollow rod and the interior of a food item carried thereon. A mesh sleeve is carried within the interior cavity to contain ash and particulates from the smoke source. The smoke source may be a smoking stick, formed of a combustible material to generate a smoke flavoring combustion by product.

    Abstract: A retaining device for trussing and cooking fowl and a method for utilizing the same. The device is adaptable to fowl of differing sizes and can easily and quickly truss, for example, chickens, turkeys, ducks, game hens, and other waterfowl that can be cooked and consumed. The device includes a main body having a pair of leg cradles formed in a plate adapted to be disposed adjacent a rear end of the fowl. A pair of wing locks are adjustably connected to the main body and include wing pins located at an end thereof which are adapted to be passed through a portion of the fowl wing and hold it firmly against the fowl body in order to allow even cooking and provide an excellent presentation of the fowl. The device is reusable and therefore environmentally friendly.

    Abstract: The present invention relates to a chop rack for cooking or grilling meat products from the inside out through a bone of the meat product in a bone-down configuration. The bone is exposed to direct heat from a heat source through a slot positioned on the middle portion of a tray. One or more support frames are insertably received in the tray to prevent the meat product from falling over. A sidewall of the tray traps grease, preventing the grease from igniting. Any grease falling through the slot provides additional heat to the bone.
