摘要： A method of reducing the amount of saturated fatty acids capable of being absorbed by an animal body relative to the amount of unsaturated fatty acids capable of being absorbed by an animal body in or from a fat-containing food product comprises the steps of i) identifying a food product comprising one or more saturated fatty acids and one or more unsaturated fatty acids, and ii) incorporating one or more water-soluble cellulose derivatives in the food product or administering one or more water-soluble cellulose derivatives before, during or after the consumption of the food product.
