Said space comprises a treatment device for treating the products. A discharge device is provided for discharging the products from the space of the treatment section. The discharge device can be brought into an active and an inactive operating state with the aid of an actuating device.

Downstream of the plucking device, the poultry is exposed to an electrical stimulation, an electrical voltage being applied across the carcass of the poultry. A method for controlling process parameters, especially the time and duration of execution of working steps in a process of mechanized working of slaughtered poultry, includes evaluating the tenderness of a specified meat portion prior to a due processing step and, after this evaluation, setting the important process parameters for the particular processing step to an optimal value.

The invention relates to a method and a device for processing a carcass part of slaughtered poultry, which carcass part comprises at least part of a rib cage, meat which is naturally present on said rib cage, a neck opening, and a wing joint, the carcass part having an interior which method comprises the following steps: applying and fixing the carcass part to a product carrier, which product carrier is moveable and which product carrier engages the interior of the carcass part, moving a wing-joint positioning member via said neck opening into the interior of the carcass part, the wing-joint positioning member being provided with one or more wing-joint positioning surfaces, which are arranged in such a manner that, in a defined position of the first wishbone blade with respect to the carcass part, the wing-joint positioning surfaces hold said wing joint into a predetermined position, exerting an internal pressure on the carcass part, in such a manner that said one wing joint is supported in the predetermined position by a wing-joint positioning surface of the first wishbone blade.

During the chilling of the poultry the skin of the poultry is moistened. The skin of the poultry is moistened by spraying it with water in a spray area that is separated from the stream of chilling air.

In a method and device for opening a blood vessel in the neck of a pre-positioned slaughter animal, a blood vessel is opened as a result of at least one cutting device being moved into the neck from one side of the neck towards the opposite side of the neck, the blood vessel being located in the path of the cutting device. The cutting device is an elongate blade which is moved in its longitudinal direction and is provided with a sharp, inclined front side. Before the blood vessel is opened, the distance between the trachea and the blood vessel is increased in an area of the opening.

This invention relates to a machine for shaping three-dimensional portions of food product, in particular meat, in particular for shaping portions of minced meat, provided with an interleaving paper applying device, as well as a corresponding paper applying device. The machine comprises a shaping device (1) with shaping cells (2) wherein are shaped portions (S) of food product, and a paper applying device (3) comprising an applying drum (4) provided with on its peripheral cylindrical surface (41) at least one paper applying system (5) in order to take and maintain papers (9) on its peripheral surface and apply them on the portions placed in the shaping cells. The machine also has drives the cells and applying drum in synchronism.

In a method and device, an elongate bone is removed from a meat-comprising extremity or part thereof of a slaughter animal. The bone has a first joint end, which forms part of a first joint, and a second joint end, which forms part of a second joint. The bone is taken out of the extremity at the first joint end, a tissue connection between the extremity and the second joint end of the bone substantially being retained. Then, meat is moved away from the bone in the region of the second joint end of the bone as a result of at least a part of the bone being moved in its longitudinal direction with respect to a scraper device towards and in particular beyond the second joint end, and the tissue connection between the extremity and the bone is mechanically broken.
