摘要: A method and apparatus is provided for baking a pocketed bun having a mold base and separable housing. The mold base has a male mold with an outside profile shape that vertically protrudes above the base. The housing has a ring around a central opening that receives and seals to the male mold when assembled, forming a chamber with an open top to receive liquid dough. The housing can either be a single piece or separable into two parts. The method of baking a pocketed bun with the mold base and separable housing starts with assembling the mold base and housing, filling the chamber through the open top, baking the pallet, then removing the housing from the mold base. The removal of the housing causes the ring to strip the pocketed bun from the mold base.

摘要: An edible cone production assembly for streamlined production of edible cones includes a conveyor, which comprises a pair of belts. A platform is engaged to and extends between the belts. A sheet, which is resiliently flexible, is engaged to the platform. A hopper, which is engaged to the conveyor, contains a batter, and portions the batter onto the sheet. A heating unit substantially encompasses a section of the conveyor between the first end and a second end of the conveyor. A guide is engaged to the conveyor within the heating unit and is positioned to selectively engage a plurality of forming units engaged to the platform as it traverses the heating unit to mold the batter into a cone as the heating unit bakes the batter. The cone drops from the platform as the platform rounds an end of the conveyor. The platform is one of a plurality of platforms.

摘要: Food products, apparatus, systems and methods in which a pocketed bun is produced by supplying compressed air into a portion of bread dough to produce an air pocket, cooking the portion to produce an at least partially cooked bun, and cutting the bun into at least two pieces, with each piece having a cavity. Air can be delivered directly inside the portion of bread dough through a tube or to an expandable object (e.g., a balloon). Preferably, the portion of bread dough is placed into an expandable mold controlled by at least an arm operated by a processor. Batches of pocketed buns can be produced by utilizing a device having multiple molds inside a chamber, and multiple stacked chambers or a shelf with multiple floors.

摘要: An automated system and method for manufacturing a cone-shaped food product holder requires the coordinated use of a forming unit, a conveyor unit and a control unit. In their combination, the forming unit rotates a conically-shaped bake form at a constant angular velocity ω. Simultaneously, the conveyor unit advances a bread dough strip on a conveyor belt at a constant linear velocity v, for deposit of the bread dough strip onto the bake form. In order to account for the conical configuration of the bake form, the actions of the forming unit and the conveyor unit are coordinated by the control unit. Specifically, the control unit moves the conveyor unit with a predetermined rotation relative to the forming unit to form the food product holder on the forming unit for subsequent baking.

摘要: Food service equipment for effectively making a hollowed-out dough product from bread or another dough product is disclosed wherein the hollowed-out dough product can then be used in connection with the housing or containment of salads, soups, hamburgers, sandwiches, desserts, or the like. The hollowed-out dough products are formed from bread or other dough products as a result of being placed atop and compressed downwardly upon a pair of platens. Concomitantly with the formation of the bread or dough products into the desired hollowed-out dough products, the interior portions of the hollowed-out dough products are also toasted by means of the platens which are heated internally. Still further, two hollowed-out dough products are formed at the same time such that, for example, they can be utilized in connection with the serving of hamburgers or sandwiches, which require top and bottom hollowed-out dough products, or alternatively, the two hollowed-out dough products can be utilized to serve a diner a pair of open-face sandwiches, or still further, the serving of multiple salads, soups, desserts, or other foods to multiple diners.

摘要: A baking device for producing baked goods, in particular for producing filled baked goods, includes baking presses that can be swung open and closed, can be moved from a feeding device through the baking chamber of the oven and to a goods removal device on a continuously moving continuous conveyor that circulates in the longitudinal direction of the oven. The baking presses have a lower baking mold and an upper baking mold, each movable between open and closed positions about a baking-press axis. The baking presses are connected to the continuous conveyor by releasable mechanical connections. The baking device also has a baking-press removal station at at least one point of the continuous conveyor, at which baking-press removal station baking presses can be removed and reattached. The removal and redelivery of the baking presses are performed on the continuously moving continuous conveyor.
