    Abstract: The invention is a process for recrystallizing sugar. The invention involves admixing a first quantity of a powdered sugar and a second quantity of an adjuvant, such as an invert sugar, to provide a sugar blend. The sugar blend has up to about 3 percent moisture. The invention then involves mixing the sugar blend with a high shear extruding means at a temperature between about 220.degree. F. and about 300.degree. F. with a residence time in the extruding means of between about 0.5 second and about 12 seconds. The invention includes the product of a combined phase recrystallized sugar.

    Abstract: A method for the continuous crystallization of sugars or polyols, comprising the steps of: arranging in a thin, turbulent and dynamic layer a continuous flow of melted mass of a compound selected among the group comprising sugars and polyols, with at least 98% of dry material, and a mass of said compound in crystalline form as a crystallization seed; advancing said thin layer of material along a cooling wall at a temperature between −15° C. and +5° C.; granulating the material while said thin layer is advanced along the cooling wall, thus obtaining granules of the crystallized compound, and cooling said granules to room temperature, after a predetermined maturation time.

    Abstract: An evaporator in the form of a vacuum pan has partitions (38) providing a plurality of compartments (42, 46) between an inlet and outlet. The compartments increase in volume from the inlet to the outlet, each compartment having at least one pair of hollow fins (50). A pair of shafts (32) pass through the partitions (38) to provide vanes (58) in each compartment. The vanes (58) pass over the surfaces of the respective fins (50) to agitate fluid in the vacuum pan, the fluid passing from compartment to compartment by way of weirs. The number of fins (50) in each compartment increases from the inlet to the outlet, and the fins (50) may be heated, as may be the vanes (58). The apparatus is advantageous in preparing crystalline sugar from sugar solution, providing for even dispersal of sugar crystals and keeping the massecuite in motion before the latter in its most concentrated state leaves the compartment (46) for further processing.
