    摘要: A kitchen tool applies texture to gnocchi or gnocchetti. The kitchen tool has a bottom surface defining a plurality of parallel longitudinal ridges. Serrations on the longitudinal ridges help the longitudinal ridges to grip a ball of dough. A cross ridge is generally normal to the longitudinal ridges and depends below the longitudinal ridges. Sides depend below the cross ridge and the longitudinal ridges. The kitchen tool may be a part of a kit that also includes a dry dough mix. A method of using the tool also is provided.

    摘要: The movement of the cutting knife (1) in the unit used for bread production in bread manufacture industry is controlled in three axes. After, the product has been carried to the cutting line along the third axis, the cutting knife group is moved by means of the trigger belt (8) triggered with a reducer (7) in the product cutting direction along the second axis. During this movement, the product surface profile reference information is identified with a laser sensor (4), the height of the cutting knife is moved with the encoder and servo motor (6) along the first axis in accordance with the aforementioned reference information. As a result, the product surface is cut with the cutting knife at a desired depth (B) in consideration with the profile and height of the product.

    摘要: Manually lowering the entire perforator on a dough layer with the aid of handles such that the weight of the entire perforator pressuring the tips of the nail like objects to penetrate through the dough layer thus producing several fine perforations in 2-3 seconds. Place the users palm(s) on the two handles or on the entire perforator for additional pressure if necessary. Remove the perforator from the dough layer by simply lifting away the entire perforator manually. For additional perforations lift the perforator and change the position of the perforator a little and perforate the dough layer. If necessary, spray oil to the pins so that other substances may not stick to the pins.

    摘要: A baking dough configuration device 10 includes a cutter or first member 12 that removably inserts into a tray or second member 18 having a preselected quantity of baking dough therein. The first member 12 is forcibly urged into the second member 18 until the first member 12 engages a lower wall 19 of the second member 18 thereby cutting or separating the dough in the second member 18 into a predetermined configuration. The first member 12 is then removed from the second member 18 followed by the removal of the dough from the second member 18. The dough maintains its configuration imposed by the first member 12 due to the dimension of the cuts or separations. The dough is then placed in an environmental chamber to allow for the growth of yeast, then baked, resulting in a bread roll having a configuration that is substantially the same as a bread roll derived from baked dough positioned into an nulloverhand knotnull configuration.

    摘要: A multi-layered pizza product includes multiple dough layers and multiple ingredient layers. A cheese or other ingredient layer is disposed between a first, bottom dough layer and a second dough layer disposed in a middle portion of the pizza. The cheese layer preferably includes a blend of different cheeses and has a relatively reduced moisture content in a desired range to reduce the amount of steam produced during baking. The second dough layer preferably includes at least one vent opening to vent steam that is produced by the cheese during baking. The second dough layer supports an additional ingredient layer that includes tomato sauce, cheese, and/or other traditional pizza topping ingredients. A method of producing a baked pizza product requires only a single, continuous baking step, greatly reducing the lengthy preparation time typically required for multi-layered pizza products.

    摘要: Baked food products are produced by forming a flat sheet of dough and feeding the sheet to a nip between a pair of contra-rotating rollers arranged with their curved surfaces in contact with each other, and each of the rollers has grooves indented into its curved surface. The rollers push the dough into the grooves and form the dough into a lattice comprising an array of ridges imparted to the dough by one of the rollers, which ridges are spaced apart from and extend in substantially the same direction as each other, and an array of ridges imparted to the dough by the other roller, which ridges are spaced apart from and extend in substantially the same direction as each other. The direction in which the ridges of one array extend are at an angle to that of the other array so that the ridges of one array intersect the ridges of the other, and the contacting portions of the curved surfaces of the rollers form apertures in the dough between the intersecting ridges. Portions are cut from the dough lattice and the portions are baked to provide baked food products having a lattice configuration.

    摘要: Apparatus for slitting and folding dough for cross-panning of the dough piece. One or more incisions are made in the dough piece so that it can be folded, and according to the method of the invention, after the incisions have been formed, the dough piece travels to the dough folding station between a moving element and a stationary control member (which may be a spring loaded control plate) so that the dough piece is forced to turn about its longitudinal axis. The length of this control movement is so arranged that the angular displacement of the dough piece causes the dough hinge or hinges to be in a desired orientation when the dough piece arrives at the folding station. In W-folding the center dough hinge is displaced from the side dough hinges by 180.degree., and the method and apparatus ensures that the dough piece is presented to the dough folding arrangement with the side dough hinges on the leading side of the dough piece.
