Abstract: 8,9-Epoxyperillartine optical isomers having good sweetness and no or moderately low bitter aftertaste characteristics, along with an increased solubility in water as compared with the corresponding perillartine precursor isomers. These epoxy derivatives are also free of the undesirable gingery-licorice taste of perillartine. The new compounds give no evidence of toxicity and can be employed in foods as synthetic sweetening ingredients.
