These inventions provide a method and an apparatus for rolling food dough without causing slipping between the food dough and rolling rollers and without causing twisted shrinkages in the food dough, and disk-shaped food dough manufactured by the method. Further, these inventions relate to the disk-shaped food dough manufactured by the method and the apparatus. The apparatus used for the method is comprised of a cradle that can relatively ascend away from and descend toward a table, and conical-shaped rolling rollers rotatably disposed at the cradle, which rollers can swivel. When the food dough is rolled by means of the rolling rollers by pressing the food dough, the rolling rollers rotate so that the speed of the rotation is higher than that when they are passively rotated by the swiveling motion. The relative speed of the descent of the rolling rollers toward the food dough is controlled so that the speed gradually decreases from the initial speed.

It includes a lower frame (3) having a food-conveying member to convey food dough in one direction, an upper frame (5) located above the lower frame, and a cluster of a plurality of extending rollers that are located within the upper frame. To extend the food dough the extending rollers are arranged to be endless and rotatable. The upper frame (5) can be moved up and down in relation to the lower frame (3) so that the cluster of the plurality of the extending rollers can be completely separated from the food-conveying member. Thus, the food-conveying member can be easily cleaned.

An apparatus for joining dough blocks to form a continuous dough sheet. The dough blocks are cut from a dough mass and drop into a space between first and second groups of rollers. The first and second groups of rollers include horizontally-paired rollers arranged in tiers and forming a substantially V-shaped space for receiving the dough blocks, with the uppermost pair of rollers being separated by a first horizontal gap which is wider than a second horizontal gap separating the lowermost pair of rollers. The first group of rollers are rotated in a direction (e.g., clockwise) which is opposite to that of the second group of rollers. In addition, the first group of rollers is alternately moved toward and away from the second group of rollers, thereby applying vibrations to the dough blocks. The combined rotation and vibrations of the rollers impels the dough blocks downward toward the second gap between the lowermost pair of rollers and increases gluten growth and a joining of the gel structures to produce a continuous dough sheet.

In this invention an upstream conveyor and a downstream conveyor located below and adjacent the upstream conveyor are provided. Between the two conveyors and adjacent the upstream conveyor, a pair of concave rollers is arranged. The rolled-up dough piece from the upstream conveyor is deposited on the concave rollers to have its center aligned with the gap between the rollers. Also, a pair of shutters is mounted below the concave rollers to stably deposit the dough piece on the downstream conveyor. This invention enables the dough piece to advance in alignment with the control line of the downstream conveyor.

It has a uniform width and thickness, and is uniform in weight throughout the entire part of the strip of bread dough. Therefore, dough products cut and formed from this strip of bread dough are of a high quality.

A method for continuously producing a dough strip of substantially uniform dimensions is disclosed. The method is carried out in an apparatus (2) comprising a hopper (4) having a divider (8) at its bottom, a conveyor (10) with a weighing device (12), a transfer conveyor (13), a thickness defining device (24) mounted on the transfer conveyor (13) and width defining members (26) between the transfer conveyor (13) and the thickness defining device (24). Dough portions supplied from the hopper (4) are weighed and supplied onto the transfer conveyor (13) one after another. By regulating the width and thickness of each dough portion, the length of the dough portion is made proportional to its weight. A new dough portion is supplied onto the transfer conveyor when the conveyor has conveyed the preceding dough portion a distance proportional to the weight thereof. Successive dough portions are connected to each other to make a continuous dough strip when they pass through the thickness defining device (24) and the width defining members (26).
