A food heating and serving package for elongated food products or food sticks such as french fries, fish sticks, waffle sticks and the like is described which includes an inner sleeve portion and an outer tray portion telescopically mounted over the sleeve. The sleeve includes a plurality of parallel partitions formed from microwave energy-absorbing susceptor material positioned in parallel relationship to define a honeycomb-like array of cells adapted to receive the food sticks for the purpose of crisping, toasting or browning the surface of the food sticks. The tray includes a broad panel defining a base with four low side panels extending upwardly therefrom to define an open wide mouth. One of the low side panels of the tray covers an open end of the sleeve so that when the sleeve is lifted out of the tray, the food sticks can easily slide through the open end of the sleeve into the open wide mouth of the tray which is of sufficient size to hold other food products such as salt or a condiment and to act as a serving dish from which the food can be directly eaten.

The invention is a method for forming package blanks incorporating selectively located microwave absorbing areas for crisping and/or browning one or more surfaces of a packaged product. Successive lengths of an extended web of thin, microwave transparent film are transported past means for depositing a thin layer of microwave energy absorbing material on one side of the film which masking selected areas of the film web by masks placed adjacent the film surface on which the microwave absorbing layer is deposited. No microwave absorbing material is deposited in the selected masked areas. Successive lengths of the resulting film are laminated onto an extended web of flexible dielectric packaging material with the microwave absorbing layer sandwiched between the film and the flexible dielectric packaging material. Thereafter, successive lengths of the resulting laminated web are fed through a die cutting machine that cuts one or more package blanks from the laminated web. The package blanks include both areas incorporating microwave absorbing material and areas free from such material. The invention also includes an article of manufacture made by the method.

A microwave food carton having two integral layer-divider panels, and a one piece blank which may be erected to form the carton. Surface areas of the top and bottom walls of the carton, and the integral layer-divider panels, are each provided with a layer of microwave susceptor material so that they are directly heated thereby upon application of microwave energy. Such a carton is particularly useful in a microwave food package for microwave heating oppositely facing surfaces of each of a plurality of food pieces disposed in three layers in the package. In such a package, one of the integral layer-divider panels is disposed between each two adjacent layers of food pieces; the food pieces are preferably uniformly thick and have planar upper and lower surfaces; and the carton is preferably sized, relative to the sizes of the food pieces, to ensure a snug contacting relation between the microwave susceptor covered walls and panels of the carton, and the planar surfaces of each of the food pieces. An exemplary use of the carton is to package potato strips which are preferably parfried prior to packaging; and which, upon being microwaved for a sufficient period of time, become crispened on their outsides; and provide a crisp-exterior, meaty-interior eating sensation without having to be deep fried.

A method is described for achieving selective generation of thermal energy from a thin metal film upon exposure to microwave energy. A deactivating material is first applied to a substrate from the thin metal film in a pattern corresponding to the region from which heat is not to be generated. The metal then is applied over the substrate and the pattern in a thickness which normally generates thermal energy upon exposure to microwave energy. Such thermal energy is produced only from those regions where the metal is adhered directly to the substrate.

A susceptor for heating a food substance in a microwave oven is disclosed which has a thin film of metal deposited on a dimensionally stable dielectric substrate, such as paper. Substrate having a rough surface may be used. Preferably, the susceptor has a complex impedance measured prior to heating, at the frequency of the microwave oven, which has a real part between 30 and 2000 ohms per square. The preferred thickness of the thin metal film is related to the smoothness of the paper substrate. A substrate having a surface smoothness, expressed as an arithmetic average roughness, greater than 0.5 microns may be used with the present invention. The metal film is preferably aluminum having a thickness between 50 Angstroms and 600 Angstroms. The substrate may be coated with coatings such as clay. Clay coated paper substrates having a thin film of metal deposited thereon exhibit improved stability of performance characteristics during microwave heating.

Corn kernels packaged within a bag can be popped within a microwave oven and then flavored with powdered cheese in two ways. In the first embodiment, the cheese powder is imcorporated in the bag with the corn kernels, oil or shortening, and other ingredient to be subjected to microwave. In the second embodiment, the powdered cheese is applied by sprinkling it on the ingredients within the bag after microwave corn popping, closing the bag, shaking it, and repeating the process several times. In both of these embodiments, when the cheese contacts the hot popcorn, it melts and adheres to the surface of the popcorn. To prevent the melted cheese from giving the popped corn a mottled appearance, a coloring material which generally corresponds to the color of the cheese powder is included as an ingredient in the bag of upoppped kernels. During microwave popping, the coloring is distributed in the bag and coats the popped corn. As a result, a cheese-flavored popcorn with a uniform, pleasing appearance is produced.

A microwave ovenable package including a layer of material that will convert a portion of the microwave energy to heat and a layer of paperboard interposed between the energy-converting layer and the food in the package which is to be cooked and browned. The energy-converting layer may be carried on a plastic film, the latter being adhered to the side of the paperboard layer which does not contact the food. An additional layer of paperboard may be used to sandwich the energy-converting layer and the plastic film between layers of paperboard. The heat from the energy-converting layer provides a surface heating effect on the food such as browning, crisping, or singeing. The presence of the paperboard layer between the energy-converting layer and the food prevents contamination of the food which might otherwise occur due to the degradation of the plastic in those cases where the microwave cooking causes the energy-converting layer to reach a temperature higher than intended.

A disposable food receptacle for use in microwave cooking is disclosed which includes a provision to brown the exterior of the food in the receptacle. A thin layer of an electrically conductive material, such as an elemental metal is incorporated into the receptacle on the food contacting surfaces thereof, so that the conductive layer will become heated by the microwave radiation and will, in turn, brown the exterior of the food in the receptacle. The conductive layer is formed as an extremely thin film deposited on a substrate protective layer by a process of a vacuum vapor deposition.

The food package includes a flexible wrapping sheet of dielectric material, such as polyester or paperboard, capable of conforming to at least a portion of the article of food's shape. The dielectric wrapping sheet has a flexible metallic coating thereon, such as aluminum, in the form of a relatively thin film or relatively thick foil, the coating being subdivided into a number of individual metallic islands or pads separated by criss-crossing non-metallic gaps provided by exposed dielectric strips on the wrapping sheet. When the food package is placed in a microwave oven, some of the microwave energy passes through the wrapping sheet so as to dielectrically heat the food item, but a lesser amount of the microwave energy is converted into thermal energy by the metallic coating so as to brown or crispen that portion of the food adjacent thereto. Various degrees of microwave transparency can be incorporated into the metallic coating so that a desired or preferred amount of browning is realized by the time that the particular item of packaged food is fully heated or cooked.
