Abstract: Machine and process for roasting of coffee beans is disclosed. The process includes the step of rapidly depressurizing the beans. The machine includes at least one hermetically sealable receptacle for coffee beans. The receptacle is heated so that the pressure inside increased. The receptacle is then abruptly exposed to a substantially atmospheric pressure, thereby rapidly depressurizing the beans.
