A method for grilling food on grill includes adding chipped wood charcoal having a size of at least one-fourth an inch in dimension through a food-supporting grill grate onto a grid underlying the food-supporting grill grate. The food-supporting grill grate comprising spaced bars for supporting food and providing a cooking area, and the chipped wood charcoal can be added to the grid directly beneath any portion of the cooking area by passing the chipped wood charcoal between any adjacent ones of the spaced bars. The chipped wood charcoal is ignited and food is placed on the food-supporting grill grate over the chipped wood charcoal. The food can then be cooked on the food-supporting grill grate. Without lifting any portion of the food-supporting grill grate and during the cooking of the food, more chipped wood charcoal is added through the the spaced bars of the food-supporting grill grate. The chipped wood charcoal can be added to the grid directly beneath any region of the cooking area by passing the chipped wood charcoal between any of the adjacent ones of the spaced bars.

Backyard type gas grills are made suitable for use with solid fuels such as charcoal by removing existing passive radiant heat material such as lava rocks and inserting an apparatus comprising supports (50) and perforated fuel basket (40). The unique design of the invention allows for its implementation in a majority of gas grills on the market by permitting the supports (50), which rest on at least a gas burner, to be positioned and fastened to the fuel basket (40) anywhere and in various directions with respect to the fuel basket (40). Locking means (56) prevent separation of the supports from the fuel basket. By locking the supports (50) to the fuel basket (40), the supports add structural integrity to the fuel basket and prevent the basket from warping and torquing due to repeated exposure to extreme temperature differentials.

According to one aspect, the method involves removing pyrolyzed wood charcoal from a kiln wherein the pyrolyzed wood charcoal comprises lumps, chips, smaller pieces, and dust particles. The pyrolyzed wood charcoal is passed over a first sieve that is configured to separate the lumps from the chips, smaller pieces and dust particles. The chips, smaller pieces and dust particles are then passed over a second sieve that is configured to separate the chips from the smaller pieces and dust particles. The resulting chipped wood charcoal is consistently sized to be small enough to pass through a food supporting grill grate and supportable by an underlying grid support, thereby allowing refueling while grilling without interruption.

A rack and screen assembly for converting gas grilles into charcoal and/or wood burning stations. The assembly is fabricated from high temperature stainless steel, so that the assembly, when heated to its cooking temperature, retains such elevated temperature for an extended period of time. The rack includes an open frame with runner legs at its lower end, that sit atop the cylindrical tubes of conventional gas grilles. Braces extend transversely across the open frame to reinforce same, and ledges are defined at the upper ends of the open frame. The perforated metal screen is inserted into the upper end of the frame until the screen rests upon the ledges. When the screen is damaged, or wears out, the damaged screen is lifted out of the frame and replaced, manually, in a simple fashion and without resort to manual tools.
