    Abstract: A freeze dry foodstuff finishing process and system produces foodstuffs that are ready for immediate consumption and preserved, while reducing or eliminating the need for chemical preservatives. The foodstuff finishing process generally comprises a plurality of drying steps with an intervening freezing step, which may be performed by a system comprising one or more ovens, freezers and freeze dryers. Foodstuffs will typically be prepared with one or more flavorings before the finishing process occurs.
