摘要： Apparatus for making variously shaped pastry shells includes an annular baking ring supported on a horizontal lower plate to define an upward-facing female die. A gasket is disposed between the baking ring and the plate. An upper plate is positioned above and parallel to the lower plate, and includes a downward-facing male die configured to be inserted concentrically into the upper end of the female die and thereby define a die space having a flat floor and annular, vertical side walls between the dies. An annular collar is disposed concentrically about the male die and resiliently supported on the upper support plate such that, when the two plates are urged toward each other, the collar seals the upper and lower ends of the die space, and a volume of pastry dough disposed in the cavity of the female die is formed into a pastry shell conforming to the die space.

摘要： A method for making a pastry shell includes the provision of an upward-facing female die, including an open-bottomed baking ring, and a downward-facing male die, and urging the two dies toward each other with a selected volume of dough inserted therebetween such that the male die is inserted concentrically into the female die to form the dough into an unbaked pastry shell conforming substantially to the die space defined between the male and female dies and having a substantially flat, horizontal floor and vertical annular side walls that intersect the floor at substantially a right angle. The baking ring, gasket and unbaked pastry shell define an assembly that is then removed from the forming apparatus, conveyed to a separate oven and baked in the oven such that the baking ring supports the walls of the pastry shell during the conveying and the baking of the shell.

摘要： Apparatus useful for making pastry shells includes an annular baking ring having one or more vertical side walls and substantially planar opposite upper and lower ends that are open and disposed substantially perpendicular to the side walls and parallel to each other. The baking ring can comprise an extrusion of, e.g., aluminum, that is ground to the desired length between the parallel plates of a centerless grinder, and can incorporate a wide variety of plan-form shapes adapted to produce pastry shells having walls with corresponding plan-form shapes.
