Abstract:
A fermentation process for the production of ethanol from natural sources, such as corn, comprising introducing a fermentable sugar and an inoculant, and a bacteriophage cocktail into a fermentation system and introducing a cocktail comprising one or more lytic bacteriophage is added to one or more of the fermentable sugar, the inoculant, or the fermentation system. Bacteriophages that infect and lyse the bacteria that contaminate fermentable sugars are selected. The bacteriophage cocktail is added in an amount effective to substantially prevent growth of these bacteria.

A method for controlling growth of contaminant microorganisms in a fermentation process using a nitrogen-free peroxygen-releasing compound. The method comprises adding the nitrogen-free peroxygen-releasing compound to one or more steps of a fermentation process. In this method, the a nitrogen-free peroxygen-releasing compound may be added to one or more components of a fermentation broth comprising inoculant, fermentable sugar and process water.

The stabilized chlorine dioxide is added preventatively to the fermentation system to substantially prevent growth of contaminating microorganisms such as contaminant yeast.

A process to preserve a carbohydrate feedstock against contaminant microorganisms comprises contacting the carbohydrate feedstock with a stabilized chlorine dioxide at a pH of at least 2.6. The carbohydrate feedstock preferably comprises a naturally-occurring carbohydrate, particularly a carbohydrate having a reducing end group. The process is particularly suitable to treat feedstocks used in biorefining processes, such as in ethanol fermentation.
