Abstract: Examples of a pre-cooked instant food products and a process for preparing such food products are described. The process comprises the steps of i) steaming the food product for pre-determined time; ii) immersing the steamed food product in a high concentration cooled brine solution; iii) removing excess water from the surface of the food product; iv) packing a pre-determined amount of the food product into a container and sealing such container, and v) storing the containers of pre-cooked instant food products at temperatures of 2° C. or lower. The container is made of a material safe for keeping food products and is able to withstand temperatures higher than 90° C. The surface of the food product is coated with the salt from the brine solution to preserve it.

Abstract: A molded pulp base container sprayed with a barrier and a sealant layer, used as a heatable package for on-the-go (OTG) food products is disclosed. The container by itself, in one embodiment, is used for microwave/oven heating the food contents in the container, eliminating the need for a separate susceptor or an additional package for heating. The inside surface of the container is spray coated with a food safe poly layer to create a moisture/oxygen barrier for shelf life stability. A sealant layer is directly applied on top of the barrier layer to provide hermesicity for the container. Adding a brine solution and a percentage of sodium to the finished package formulation, selectively heats the food contents of the package while keeping the package itself cool enough to handle. In another system embodiment, a condiment package is fitted to a formed top of the container.

Abstract: A frozen food package and method of producing and using the same is disclosed. The food package includes a bag which is freezable, ovenable and microwaveable. A frozen food assembly within the bag includes uncooked food, preferably an entree. Typically, the food assembly includes a meat, a fruit or vegetable, and a flavoring liquid such as a broth or stock, and may include infused oil or a dairy product. The uncooked food is typically embedded in the frozen liquid to facilitate handling and shipping and to align the frozen food with a display window of the bag. Chemical preservatives are not necessary and sauces may be omitted although sauces are not burned in the cooking process. The method typically includes sealing the frozen uncooked food in the liquid-impermeable bag and cooking the food in the sealed bag. The resulting dish is a substantial improvement over the well-known precooked frozen meals.
