Abstract: Machines and methods for slicing products into lattice-type slices or chips. The methods and machines utilize a cutting head having an annular shape that defines an axis of the cutting head, and an impeller assembly coaxially mounted within the interior of the cutting head for rotation about the axis of the cutting head. The cutting head having at least one knife at a perimeter thereof and extending radially inward of the cutting head. The impeller assembly has a base, a cavity within the base, a central opening to the cavity within the base, and equi-angularly spaced tubular guides extending radially outward from the base for delivering products within the cavity toward the perimeter of the cutting head as the impeller assembly rotates within the cutting head. The impeller assembly includes features with the ability to increase product throughput and increase the useful lives of the impeller assembly and cutting head.

Abstract: Knife assemblies for securing knives to slicing machines, slicing machines equipped therewith, and methods of operating knife assemblies for securing knives to and releasing knives from slicing machines. Such a knife assembly includes a knife holder having a knife support surface, a knife supported on the knife support surface, and a clamp having a base portion adjacent a trailing edge of the clamp and a knife-engaging portion adjacent a leading edge of the clamp. The knife assembly applies a clamping load to the clamp to secure the knife to the knife holder. The clamp is prevented from translating relative to the shaped knife in a leading direction of the knife assembly as the clamping load is applied and/or permits removal of the clamp by being translated in the leading direction.

Abstract: Machines and methods capable of producing diced products from a variety of materials. Such a machine includes a knife adapted to slice food product to produce slices, a circular cutter comprising knives that are adapted and arranged to cut the slices into strips, a cross-cutter comprising knives that are adapted and arranged to produce a cross-cut in the strips, and a shear plate that is at least partially between the circular cutter and the cross-cutter. The shear plate defines a first shear edge in proximity to the knives of the cross-cutter and is adapted to ensure dicing of the strips received by the cross-cutter from the circular cutter. A support bar supports the shear plate, and a feature is provide for adjusting the proximity of the first shear edge relative to the knives of the cross-cutter.

Abstract: Methods and apparatuses for reducing food products. Such a method includes introducing a food product into an impeller rotating within a casing about an axis thereof. The impeller has paddles and pockets defined by and between adjacent pairs of the paddles. The paddles are circumferentially spaced so that each pocket is sequentially radially aligned with a circumferential opening of the casing as the impeller rotates. Each paddle has a relief slot defined in an outer radial edge of the paddle. Food products are expelled from the pockets and cut with a knife disposed at the circumferential opening of the casing as the impeller rotates and the pockets travel past the circumferential opening. The knife defines a cord of the casing, extends into the path of the paddles, and passes through the relief slots of the paddles.

Abstract: Tools for replacing knives in cutting machines. The tools include a clamping body having a base, bracket, clamp, and knife support tab(s). The bracket has a flange portion spaced apart from an upper surface of the base. The clamp is coupled to the base for translating in translation directions transverse to a longitudinal axis of the base. The clamp has a lift tab on the same side of the base as a rear surface thereof, and a handle is secured to the flange portion of the bracket and located on the same side of the base as the lift tab. The support tab projects from the front surface of the base, and the clamp is biased toward the support tab so that the clamp and support tab create a knife gripping mechanism for clamping an edge of a knife against the tab.

Abstract: Methods and machines for cutting solid and semisolid materials, for example, food products. The machine has a dicing unit that has a feed drum, circular cutter, and cross-cutter each individually rotatably mounted to a support structure by cantilevered shafts. The machine further has a knife for producing slices of a solid or semisolid material, circular knives on the circular cutter to cut the slices into strips, and cross-cut knives on the cross-cutter to dice the strips. The machine also has a stripper plate for removing the strips from the circular cutter, and an outboard support assembly for supporting and radially centering outboard ends of the shafts of the feed drum, circular cutter, and cross-cutter and for supporting and securing the stripper plate relative thereto.
